Pepparkakor, or Swedish gingerbread cookies, are a delightful holiday treat. Here's a basic recipe for making traditional Swedish Pepparkakor:

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  1. In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, cardamom, and salt. Set aside.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add the molasses, egg, and vanilla extract to the butter and sugar mixture. Mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough is too sticky, you can add a little more flour.
  5. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out one disk of dough on a lightly floured surface to about 1/8 inch thickness.
  8. Use cookie cutters to cut out shapes and transfer them to the prepared baking sheets, leaving a little space between each cookie.
  9. Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. Repeat the process with the second disk of dough.
  12. Once the cookies are completely cooled, you can decorate them with icing or enjoy them as is.
